Bright straw-yellow with subtle green highlights, the 2021 Protos Verdejo from Rueda is fresh, lively and impeccably balanced.

On the nose, you’ll find vibrant aromas of green apple, citrus (lemon, lime), tropical fruit (pineapple) and herbaceous notes like fennel and boxwood. Hints of white flowers add further elegance. The palate is dry and crisp, with a clean acidity that excites without overwhelming; lees aging for approximately three months lends structure and a rounded mid-palate.

A long, slightly bitter finish is typical of this variety, making it perfect for pairing with seafood, sushi or light fare.
